I love these gorgeous vegan truffles. Not only are they super easy and taste delicious but I reckon they’re pretty healthy too.
It’s a dessert, or it’s an afternoon snack. Or heck, go ahead and have a couple for breakfast if you like.
They’re like little power balls of awesomeness.
You can buy these ‘energy balls’ at the shops around here and these are similar, but I’d say these are much, much yummier.
This is a super-simple 5-ingredient recipe that you whip up in your food processor. There’s no baking involved. So it really couldn’t be easier.
How To Make Vegan Truffles
You process almonds, pine nuts, dessicated coconut, cocoa powder and maple syrup up in the food processor and then roll the dough into balls. Then you roll the balls in either more cocoa/cacao powder or dessicated coconut. Easy as that.
You might think rolling the balls in cocoa/cacao powder wouldn’t taste very nice because it’s unsweetened (and pretty bitter) but it actually works out great, because the truffle itself is wonderfully sweet, so the cocoa powder on the outside actually works great in spite of it being bitter tasting on its own.
Storing and Freezing
Keep them stored in the fridge or freezer. They don’t freeze solid in the freezer but do get very hard and chewy, whereas in the fridge they are softer but still perfectly hold their shape.
If you store them in the fridge then enjoy them within 7 days. If you store them in the freezer then enjoy them within 2 months.

Vegan Truffles
Ingredients
- 1 cup Raw Almonds (150g)
- 2 Tablespoons Pine Nuts
- 1 cup Dessicated Coconut (80g) Finely Shredded Coconut, Plus more for rolling
- ½ cup Cocoa Powder (42g) Unsweetened
- ½ cup Maple Syrup (120ml)
Instructions
- Place the almonds into the food processor and process until the almonds are finely chopped.
- Add the pine nuts, dessicated coconut and cocoa powder and process quickly to mix it all together.
- Then, while the processor is running, pour the maple syrup in and allow it to form into a thick sticky dough.
- Take two bowls and add dessicated coconut to one and cocoa powder to the other.
- Roll the sticky dough into balls and dip in either the dessicated coconut or the cocoa powder and place onto a parchment lined baking tray.
- Freeze until firm.
Notes
- Dessicated coconut is also called finely shredded coconut.
- You can use raw cacao powder instead of the cocoa powder if you prefer.
- Store them in either the freezer (doesn’t freeze solid but becomes very hard and chewy) or the fridge (not as firm but still nicely chewy).

Is there any way to substitute the pine nuts? Cashews maybe?

Sure! You can substitute that with any other nut or seed that you like. This recipe is really quite flexible. 🙂
