You can substitute with any non-dairy milk and add a teaspoon of vanilla essence for a bit of vanilla flavor. 🙂

Hi Marina. We only tested the recipe with molasses, but I think you should be able to leave it out. The taste of the cake won’t be the same “gingerbread” taste though.
