I’m not sure as we haven’t tested the recipe with self raising gluten free flour, but maybe just leave out the baking powder and baking soda. The salt is what helps bring out the flavor in the cake.

Yes, we put both in at the same time in the middle of the oven. If you want to only make one layer, rather use a larger pan and bake it for longer so it cooks through.

However I did find it a little crumbly for my liking, and therefore I did struggle to cover it in buttercream when making a tier cake.
