I was looking for a good recipe to use up a huge pumpkin – found this one – not so much good as GREAT. Now I need to find another pumpkin! Soup was absolutely delicious, definitely hanging on to this recipe. If you don’t like it spicy, leave out the cayenne pepper as it does have a little kick on day 2 (day 2 soup is always best).Definite recommendation from me 🙂

In reply to Taylor. Not sure what happened there either Taylor. This soup is not super thick. However, you could always cook it for a few minutes more before blending. More water will evaporate and then you will get the consistency you prefer. Thanks for your review anyway. :)

Came out very watery and I can’t figure out why. I followed the instructions step by step and ingredients to a tee. Had to roast more veggies in the oven afterwards for it to not have a watery consistency. Will just stick to my own recipe next time but glad it’s a hit for others.
